...I think Latke has become my soul animal. XD Anyway. All you need is a ripe banana and 2 eggs per pancake. These are loaded with protein and I could eat them for any meal. However since they're made from bananas, syrup with them tastes weird. I prefer brown sugar. My family says they taste like French toast. Mash up the banana well, stir in egg until well mixed then fry in a skillet. Watch closely so they don't burn. They will quickly become the consistency of pancakes. Very light and fluffy. Terribly good.
